I second the recommendation on getting a crock pot - food preparation is simple and almost foolproof. A hot air cooker is also good.

I think you become enlightened when you realize that you become what you think about.
And if you can control what you think about, you can control what you become.
I think you are on the right track, but I will add this: what you are isn't a product of thinking, and you can't add anything to your true essence. In other words, you are already fully complete and have no need to "become" anything more because it's in knowing yourself that you feel and realize that you are complete. It's the perceived "need" to become something that keeps you trapped in duality. That's what the enlightened have realized directly.

I think Lao Tzu means this: to "know yourself" means to be able to see how you deviate away from your true essence and then return there spontaneously when you find yourself in the world of duality. When you know yourself you "see" those strategies that draw you away from that essence and are no longer fooled into remaining in the mentally created world of separation. In other words, you can function there when needed, but no longer get lost and trapped there because you are so consciously and firmly anchored in your true essence.

i admit to being a lurker for quite some time before joining and now i am ready to post and i want to introduce myself.
i am/was 3rd generation and daughter of the po (as it was termed at the time) for most of my life.

I'd just like to add my welcome, joyfulfader. But I'd also like to add this: you are now about to enter a huge marketplace of beliefs, religions, and philosophies to explore, and it's tempting and common to simply switch from one to another. Is that what you want, to replace one set of ideas for another? Which of those beliefs is the right one, and upon whose authority does that declaration rest?
Perhaps you can allow yourself some time to let it all drop away so that you can get some distance from the whole dynamic of religious ideas, and then later, if you are so moved, you can re-enter that marketplace with a greater clarity of mind. You asked yourself some very good questions earlier about what thoughts are yours and what were given to you or provided by others. Now is your chance to find out by letting the idea of having to believe something drop away.
