It's not just a European thing, it's a southern thing as well, there's something called blood or liver pudding I believe, but it's more like sausage and it has the liver and all the other parts you usually toss away, but I love it !!
I found some in a well known chain meat market here in NYC, I think on the wrapper in said liver pudding, or sausage but it's the same thing..
Asians use the pork blood as well, I see containers of straight blood in their stores and they sell it in "tofu form" in squares also
