i would like to know if ex's and formers who are not church christians, believe that many of jws' doctrines and bible interpretations are correct, or do you feel that they aren't?

Actually, it's not. Many Orthodox Jews have the same doctrine:
Completely wrong. The document you source was not even written by a Jewish person, much less a Rabbi. (Ten Commandments? Seriously?)
Even more puzzling is that the document conflates JW beliefs, including their strange categorization of blood components, with Judaism.

I put personal choice on a very high pedestal, but this is not about the rights of the individual. This is about the rights we accord religious organizations.
You can argue that the sanctions a religion may impose are different than a government and I would agree, but in both cases, the result is harm to the individual.
Since we define religion (In the U.S.) as fundamentally charitable in nature, an organization should adhere to that definition if they want to be accorded the benefits of religious status.

The modern event and it's location at a fairground was based primarily on horse racing. Even the beer (And rotisserie chicken) for which it is known today, did not come until much later.

Outside of the context of alcoholism, Jehovah's Witnesses have spoken of it very neutrally in the past: (Perhaps not in English, but certainly in German)

Oktoberfest is a 16/17 day long carnival/festival. It's not a holiday and not religious
JW's (AFAIK) don't have a problem with beer, folk music, or carnivals in general as long as there is no "reproach."
