Emergency COVID Ration Spam Fritters
by Simon inso as things are now opening up and food never ran out, i've been dipping into our emergency supplies.
they say that spam doesn't have a shelf-life, it has a half-life, but i kind of wanted to see if it was like i remembered as a kid.. as it turns out spam fritters are as delicious as i remember, probably better ('cause i did fancy ones).
i used this recipe and they were glorious.

Simon, why did you have to bring up Spam???
Believe it or not, on Sunday morning I went to our largest food store chain here in Florida, Publix, and there was not a single can of Spam. The shelves had the labels on them (Original, Low Salt, Low Fat ... blah blah blah) but no actual Spam. The shelf space was totally empty. I don't know why. I was just thinking they make it in some "locked-down" place or something and they are not shipping.
I bought a can of corned beef hash instead. I took it home and then mixed in a half cooked egg. I like that too.
My wife will not eat, as she calls them, "mystery meats", but she had her granola stuff while I increased my cholesterol level by 10%.
At least it tasted really good. When I go shopping later (beer is getting low in the refrigerator) I will see if they have a new supply of Spam.

Yes, several are "up there" in age and known by many. Nothing can realistically happen to them. They are part of the furniture.
It's the younger ones, as you mention, in the 40's to 60's that should sleep with one eye open.

The "lifers" I know and was referring to are ones that my family have known since the time of Christ and don't have much life left ... if you get my drift.

Yes. A few of the people I know there are Bethel "lifers." What options do they really have? You just smile and as you say, put on a happy face. Their options are very limited. Perhaps more correctly to say, they have no other options.
