    Yesterday, potatoe and leek soup with bacon bits, and garlic/dill homemade bread. Tonight it's good ole meatloaf.. heheh.

    All the pasta dishes sound too delish for words.. <drools>

    It's an Italian cookie. I've always called them ribbon layer cookies. Each layer is made from the same dough, just with coloring. It's basically almond paste, sugar, and eggs. Then you top each layer with a thick coating of raspberry jam and weigh it down overnight. This makes the jam soak into the cookie and it ends up tasting like liquor for some reason. Then you cover it with chocolate ganache. I thought you were an Italian gal so I didn't bother with the explanation before :)

    LOL! I was raised in an Italian fam, Rebel8, but we never saw those cookies before. But then, we've got some recipes that I've never seen anyone else cook up before either. My Aunt Jackie Solano's Italian Stew, w/stew meat, whole okra and potatoes in a spaghetti sauce and the stuffed Sipoli, a wonderful fried bread stuffed with roast beef, mushrooms, olives and cheeses.

    The Ribbon cookies look wonderful. I guess I could find a recipe online somewhere, eh?

    Ribbon Layer Cookies

    8 oz almond paste

    1 cup white sugar

    4 eggs

    1.5 cups butter, at room temperature

    1 tsp almond extract or amaretto

    2 cups flour

    green and red food coloring

    12 oz. seedless raspberry jam

    4 oz semisweet chocolate

    2 tablespoons of milk

    Combine paste, sugar, and eggs in lg bowl with mixer. Beat at high speed until smooth (takes a while). Add butter and extract, blend. Add flour and continue mixing until smooth and fluffy.

    Preheat oven to 350 degrees. Divide into 3 parts, about 1.5 cups each. Add food colorings to make 1 uncolored batch, 1 red, and 1 green.

    Grease sides and bottom of 13x9x2 pan and line with wax paper. Pour green batter into pan 1st and bake for 15 mins (no longer). It looks undone in the center. Cool in the pan a few mins. and then place on wire rack. Repeat with yellow then red batter.

    Line a big cookie sheet with aluminum foil. Put the green layer on it and spread with half the jam. Put the yellow layer on top of that and cover with the rest of the jam. Top with red layer. Cover the whole thing tightly with foil. Place in fridge overnight, weighed down with a large heavy book or other weight.

    The next day, melt the chocolate and milk together over low heat or in a microwave. Spread on top. Cool completely and cut into small squares.

    These cookies last a long time when stored in an airtight container and refrigerated. I've heard they freeze well too.

    I'm making slow cooked (adobe chicken and rice tonight (hope the place doesn't catch on fire while Im gone.) Maybe some spinich on the side.

    I never tried adobe chicken, Under74. It sounds interesting.....and I LOVE spinach! We had chicken noodle soup (for those with the flu bug) and chili dogs for the g/kids tonite. I'm gettin' ready to make gingerbread men with my g/daughters this Friday nite.
