My delicious homeade chicken wontons dipped in peanut sauce

    You can get wontons, in various shapes, at your grocer. I prefer the small squared.

    Partially defrost boneless chicken tenders, breast or thighs. YOU DO NOT HAVE TO COOK CHICKEN FIRST. IT WILL COOK UP FAST IN THE OIL.

    Oil your food processor bowl for easier clean up later [ clean with hot, soapy water ASAP when finished completely ]

    Heat up canola or vegetable oil in deep pan or pot. Make sure it's very hot.

    Chunk up your chicken and place in processor. Pulse until it basically forms a ball. Partially frozen, it should form this ball. Put in metal bowl.

    Chunk up fresh garlic, green and red peppers, onions. Pulse in processor. Add to chicken bowl. If your processor is big, you can pulse all ingredients together WITH chicken.

    Add a dash of sugar and table salt. Half teaspoon each of pepper, garlic salt, garlic powder, onion powder, ginger. Dash of soy sauce. Combine well.

    Slightly wet edge of wontons with water, to seal. Spoon in chicken mixture. Seal edges.

    Drop into oil until golden brown. Place on paper towels and sprinkle salt over them.

    PEANUT SAUCE:

    One cup peanut butter

    One tablerspoon soy sauce

    One tablespoon olive oil

    Dashes of garlic salt, garlic powder, sugar, onion powder and ginger

    MICROWAVE until smooth.

    ENJOY!!!

    Keep in mind: You can prepare a big batch of chicken mixture, portion it out and freeze it. Same with the sauce.

    OK, Here's my bush recipe for a delicious roast:

    Fire up the potbelly until it's nice and hot (hardwood's best)

    Put your roast (lamb or beef marinated in wine and garlic is excellent) in a medium camp oven on top of the potbelly with a dob of butter and a splash of wine..

    After half an hour add peeled potato, carrot and pumpkin chunks.

    After another half an hour (or as soon as a a delicious smell suddenly permiates the room) remove the lid to reveal a heavenly meal.. pour instant mushroom gravy over the top for a meal to die for washed down with a cardboard red leaning back in a big soft chair watching survivor New York

    Yes, I love to cook and quiet frequently, play around with ingredients to come up with my take on something.

    The FOOD NETWORK is a great inspiration I've found.

    Incidently, in junior and senior high, I got all "A's" in every single cooking class I took. Which was every semester.

    Sidenote on the chicken mixture: it makes fabulous chicken burgers too!

    That sounds delicious, skally. But I have a problem. I don't own a large food processor! I only have a small electrical veg/nut chopper. What would you suggest using to chop chicken? Mixer? Just a real quicky blend?

    Maybe you could buy some ground chicken breast at the supermarket? That might work just as good.

    As jonesy suggests, yes you can buy ground chicken. Yet, the texture won't be the same as if you pulverize it in the processor. It comes out like pie dough this way. Nice and firm. If you use completely defrosted chicken, it comes out like pate.

    You could use a nut/ veggie chopper, yet the texture may be just like grinding it.

    You can NOT use a mixer.
