How are farm animals bred for meat killed today?

    It all sounds so awful.

    I use to live in Chicago and once in awhile would drive by the big stock yards......stink doesn't even describe the smell.

    To this day I have a hard time eating meat.

    I don't eat chicken, I have a difficult time with beef and pork when I start thinking about it!

    I wish I didn't feel this way.

    I have been wondering about how long the ancients were able to bleed meat, given the hot Mediterranean climate, spoilage, etc. Would they not have had to eat it shortly after butchering? Otherwise there would have been a problem with flies, bacterial growth, etc. We can hang meat nowadays for longer because it is under refridgerated conditions. Any one know about this?
