    Okay, Lee. Here's the two different recipes that I've made and they really are easy. I thought I'd have to use a rolling pin and such but I just worked them into "logs" with my bare hands.

    Chocolate Biscotti recipe

    (Lee, on this one, I found that I had to bake 'em 5 mins. less than the recipe called for, but we're kinda below sea level here, so do what works for you)

    1 1/2 cups all-purpose flour
    1/2 cup cocoa
    1 1/2 teaspoons baking powder
    1/2 teaspoon baking soda
    2/3 cup granulated sugar
    3 tablespoons butter, softened
    2 eggs
    1/2 teaspoon almond extract
    1/2 cup almond, coarsely chopped Preheat oven to 350 degrees F. Grease 15 x 10-inch baking pan. In small bowl, combine flour, cocoa, baking powder and baking soda; set aside. In large mixer bowl, beat sugar, butter, eggs and almond extract until creamy. Gradually beat in flour mixture. Stir in almonds. Divide dough in half. Shape into 2 (12-inch long) logs; flatten slightly. Place in prepared pan. Bake 25 minutes. Cool in pan on wire rack 5 minutes. Cut into 1/2-inch thick slices. Return slices to pan, cut-sides down. Bake 20 minutes longer. Cool completely. Makes 4 dozen cookies.

    Almond Anise Biscotti recipe

    (Lee, I added 1/2 tsp almond extract to this one, bec I didn't see any flavoring except the anise and the almonds.)

    1/2 cup granulated sugar
    1/2 cup brown sugar
    1/4 cup butter or margarine, softened
    1 tablespoon anise seed
    3 eggs
    3 cups all-purpose flour
    1 tablespoon baking powder
    1/2 cup chopped almonds Beat sugars and butter until well blended. Add anise seed and eggs; blend well. Stir in flour and baking powder; mix well. Stir in almonds. Shape dough into two 10 x 1-inch rolls. Place rolls 4 inches apart on greased cookie sheet. Flatten each to 2-inch width. Bake at 350 degrees F for 20-30 minutes or until golden brown. Cool completely. Cut diagonally into 1/2 inch slices. Arrange slices, cut side down, on ungreased cookie sheets. Bake at 350 degrees F for 6-10 minutes or until bottom begins to brown. Turn and bake for an additional 3-5 minutes or until crisp. Cool completely. Store in tightly covered container for up to one month. The anise flavor gets stronger with time.

    Hugs to you, Cog. I'm with you, hiding out in the opposite end of the house from my husband, with my laptop. I'm past crying now. I'm biding my time, getting organized, considering starting a new life, if I'm not too old.

    It's an ice storm here, so I'm waiting for the inevitable power outage. I went to the grocery for my elderly parents today and cleaned their house a little, fixed them lunch, etc. I've cleaned here at home, cooked a beef roast in the crock pot, and taken care of the zoo (I mean our pets, of course). Took a nap too late in the day so now I'm AWAKE.

    If yall're driving, maybe there's someone else coming from up that way that yall can carpool with, eh? You could check with the Apostafest hosts/hostesses and see. It'll probably make it less expensive for all concerned.

    Good thing, Abandoned. I love Mexican music. I think it's the first thing I danced to when I was a kid. My adopted aunt was from Mexico City and we went to a 4th of July Pinata party at White Rock Lake in Dallas. That is so neat! Thank you for sharing that.
