Thank you for mentioning one of my two all-time favorite bands--Cowboy Junkies. Their first album, "Whites Off Earth Now," is almost exclusively covers by Bruce Springsteen, John Lee Hooker and Robert Johnson. "Trinity Session" had quite a few, too, with the already mentioned "Sweet Jane," a modified "Blue Moon," "Dreaming my Dreams with You," (covered by quite a few, incuding Alison Krauss and Waylon Jennings) and my favorite--"Walkin' After Midnight." My first tattoo was Junkies inspired. ;)
My OTHER all-time favorite band, Nirvana, has some great covers--"Molly's Lips" (Vaselines) and "Love Buzz" (Shocking Blue.) (And yes, I have a Nirvana inspired tattoo, also!)
Not a well-known example or one that's even easy to find, but I love the Pat Metheny cover of Third Stone from the Sun that appeared on a Hendrix tribute album from the 1990's titled Stone Free.
Crash Course in Brain Surgery by Metallica is another fave of mine. I loved that punk covers Garage Days thing they did back around '87.
