well when i can afford FOOD ( i'm in a poor me mood today lol)

anyway, there are just 2 in our household at the moment so i cook light.

usually a meat and 2 veggies..

best meal we've had in a while was a big ole pot of white beans with onions and cornbread

i sometimes cook taco's or quesadillas.. sometimes have a bacon, cheese and onion quesadilla for breakfast

i love fresh veggies when i can get them. its almost sweet corn harvest time here in the south. i cannot wait!

I read once that most people have about ten recipes that they cook over and over again for years. I used to do that, Mexican food, Italian food, learned some Thai recipes, Moroccan chicken, used to make lumpia and adobo, egg rolls. It's all "used to" because I've been on a diet since last August. But I have some fabulous recipes I can still make for special occasions.

Omg, me and the hubby were just talking about lumpia last week. Yummy. One of the reasons we missing living in California, I should just learn how to make them myself.

    I cook with a cajun/southern flair.

Saturday I cooked pecan crusted tilapia with asparagus rice on the side. And a mandarin orange cake. (Had company over)

Sunday I cooked lasagne and fettichini alfredo.

Monday was a brisket, green beans, and rolls.

Tonight needs to be leftover night. I made buttercream icing last night and I need to bake a cake to ice with it.

I LOVE to cook ... Its my passion! I am an aspiring chef -- or maybe pastry chef.

I make steaks, salmon fillets, lasagna, cabbage rolls, perogies, stuffed peppers, homemade sausages, stir frys, roasts, BBQ ribs, borscht, soups, cakes, etc. I make everything from scratch. No pre-fabricated shit here.

I generally try sticking to a Meditteranean style of cooking: Fresh vegetables and fruit, whole wheat pastas with sundried tomatoe pesto and some greek feta cheese and a glass of red wine......Doesn't get any better than that.

I was at the grocery store the other day and they had a fantastic sale on fillet mignon (beef tenderloin), so I bought a rack of it for $50.00, took it home, cut it up, labelled it and put it in the freezer. I got 20 pieces out of it, so I'll wait till I go out to Delilah's home-away-from-home this weekend and maybe take a few pieces.

en-nj-jw asked: Anyone have a good recipe for Chicken salad? My hubby loves it but mine never comes out quite like I would like it to.

I just buy a whole chicken that's already cooked, take the skin off and chop it up, put it in a bowl. Add a bit of green onion, some celery chopped fine, and an apple (any kind you like with the skin on) chopped up. Add a bit of salt and pepper. Add some mayo mixed with a bit of sour cream. Once it's mixed, cut up some fresh strawberries and add it to the salad. You can either eat it just like that, or put it on some iceburg lettuce. It's YUMMMEEEEE!!!

I like the low country style cooking of South Carolina by the Gullah people, it is similiar to cajun/creole but I cant get it here in Tennessee. That is why I like going to Myrtle Beach along with the Calabash style seafood.

I dont cook many meals at home, I usually eat microwaved foods myself since Im a bachelor again.

I'm strictly vegetarian, my man is strictly carnivorous. We have lots of things like burritos (chicken for him, black bean for me) that we can adapt to our individual diets, while still feeling like we're eating the same basic meal. TONS of Mexican food, some stirfries, and seafood quite often. We live on the coast of Maine, where the best seafood in the world is caught, and I have connections with local lobstermen, so we get it cheap and fresh-YUM!
