I tried this in New Orleans once, while on a business trip. LOVED IT! If I ever return to a place that serves it, I would have some again in a heart beat. Nothing like that in the Northwest. We have Pork Rines, which are good, not the same though.
Recently when I was playing with my bird, Rocco, I gave him a few pellets to eat while we were watching TV. Suddenly he ran up my stomach to my face, and popped one of the pellets into my mouth. It tasted pretty good, so I ate it. It's probably a lot healthier than most snack foods anyway.
