Have the movies explained why he wanted to kill the Potters? If so I've missed it.

Harry survived because his mother sacrificed her own life to save his, which is old magic Lord V did not count on. That is also why Lord V could not touch him in the first movie, the traces of her love were on Harry and Lord V, being evil as he is, could not stand to touch it.
Lord V decided to kill Harry as a baby because of the prophesy he is after in The Order of the Pheonix. The prophesy states that one would be born at the end of July who would have the power to overthrow the Dark Lord. According to the terms of the prophesy it could have pointed to either Harry or Neville. Lord V felt that it pointed to Harry as the greater threat and therefore decided to kill him. In doing so he marked Harry and transfered some of his powers to him, thus proving Harry as the one mentioned in the prophesy. In short, Lord V chose his own means of destruction.

Lord V told Harry that his mother need not have died. His primary target was Harry, not the Potters in general.
