Shark is wonderful. Like any fish you must not overcook it. In some restaurants it is served under the swordfish name and it is very similar. A 1 inch thick steak, coated in olive oil/garlic marinade. On a hot grill about 3-4 mins on each side.
Jeff, since you're in Indiana I assume your shark is frozen. No problem, but make sure it is completly thawed before grilling.

Yep - what I ate was a bit 'chewy' - likely due to what you stated. It was not fully thawed when I grilled it. Next time will be better then. Nonetheless, it was not bad at all. Thanx Gregor.
The tinfoil and garlic idea sounds good too.

I had shark steak when at South Padre Island in Texas. Grilled, It was pretty good, but after being in the sun on the beach all day, with a bit of beer, anything is good!!!'

This looked good:
Citrus Marinated Shark Recipe
Ingredients: 3 limes, juice of
3 lemons, juice of
1/2 cup Coco lopez
2 ounces Tequila
3 tablespoons Chopped green onions
1/4 cup Finely-chopped cilantro
2 tablespoons Finely-chopped red pepper
2 tablespoons Finely-chopped yellow pepper
2 Fresh jalapenos; finely chopped
1 Salt; to taste
1 Freshly-ground black pepper; to taste
2 Shark steaks (8 oz ea)
2 tablespoons Olive oil
Fresh cilantro sprigs </form>Directions:
In a mixing bowl, whisk all the ingredients together except for the shark and olive oil. Season with salt and pepper. Place the fish in a glass casserole dish. Pour the marinate over the shark and refrigerate for 24 hours.
Remove the fish from the marinade. Heat the olive oil in a saute pan. Sear the shark for two minutes on each side. Remove from the pan and slice. Mound the salad in the center of the plate. When I lived in Halifax we used to go to the Fisherman's Market and get shark and tuna steaks for $0.99 a pound so we ate our fair share of it. One steak would feed our family of 4. It was always BBQ'd, and what we found best was wrapping it in tin foil with a healthy dose of lemon, butter, salt and pepper and cooking it for about 10 minutes on medium. Came out perfect every time! Make sure you close the lid on the BBQ though.

I have eaten shark as well as swordfish steak and really couldn't tell the difference.
Could be because I thought they were/are one and the same. I read an article some years ago stating that if swordfish steaks are on sale at your local fish market or grocery store..............they are more than likely shark. Could be that any market could fool the unknowing like me.
I just googled shark/swordfish and came up with the following.
Shark is sometimes sold as swordfish, but it’s easy to tell the difference. Swordfish steaks have four whorls in the meat and smooth skin around the edges. Shark meat has an unsymmetrical grain and rough skin.
