    I have a recipe for broccoli salad, and I can't ever seem to make enough.

    2 large broccoli, cut into small floweretts

    1 small onion, diced

    1 clove of garlic, minced, optional

    3/4 cup Mayonnaise

    1 tsp. white vinegar ( mix the mayo, vinegar and sugar together in a small bowl, and

    1tbsp. sugar adjust the ingredients to taste)

    1/2 cup dried cranberries

    1/2 cup chopped pecans

    salt and pepper to taste

    Throw it all in a bowl and toss well. Refrigerate until ready to serve.

    I have a recipe for greens but it's in my head...if anyone wants it I'll write it down.

    Mrs. Jones - all my recipes are in my head, that's the way I learned to cook, my mom never wrote down anything just did it! So come on with the greens recipe, I have one (also in my head) but would love to try a different version!

    Anyone with a recipe for spinish dip?

    Mine too. My mother once asked me to make potato salad (I think I was about 16) and she like mine better than her's. She asked me how did I know how to make it, it was by watching her. That's how I make of the dishes I cook, remembering what she did and sometimes adding my own spin to it.

    Josie's Crockpot Greens

    10-12 bunches of greens (more or less depending on size of crockpot) mixture of collards, turnip, and mustard

    1/2 pound of turkey sausage

    3 or 4 cloves of garlic,diced

    water

    salt, pepper, and crushed chilli pepper to taste

    Clean greens thoroughly with several changes of water. Cut away tough stems and cut large leaves in strips. Place in crockpot with sausage, garlic, and a little salt and pepper about a teaspoon each. Add water but don't fill to top of crockpot, stop a couple of inches below the rim. Cook for 8 hours on low, then taste to season and add more if needed.

    I usually set up my greens the night before to cook and let them stay on warm until dinner. I like my greens really tender.

    Mrs. Jones - I've never done my greens in crockpot, I think I try this for Sunday dinner this week. I'll let you know how they come out!

    These are the best potatoes you will ever have! Doing potatoes the day of is messy and time consuming. These can be made up to 3 days in advance. When you take the turkey out of the oven, pop the potatoes in to bake while the turkey is resting and then being carved.

    Make Ahead Mashed Potatoes

    5lbs potatoes

    2 sticks of butter or margarine (1/2 cup)

    salt and pepper to taste

    8 oz small curd cottage cheese

    4 oz sour cream

    Butter a large casserole dish (I use two smaller ones)

    Peel and cook potatoes. Mash with butter or margaring. Add salt and pepper. Stir in sour cream, fold in cottage cheese gently.

    Bake at 350F for 30 min uncovered.

    Don't let the cottage cheese get to you. I know many that don't like it, but you won't even know it's there. Once you stir the potatoes after they are cooked, the curds just disappear.

    Semi-hijack:

    I came up with a great way to discover recipes online.

    I simply type what I have on hand into a search engine, and check the results.

    Example:

    If I had potatoes, onions, hamburger, and tomatoes, I find out that I could make a

    ground beef casserole, which I had never heard of before.


    I call this method the Bachelor's Surprise.

    Mad Tiger...That method is also one that many wemon use, except without the computers help! Most of my meals are not from a recipe....and I just throw things I have togethers. But...I like your idea!!

    Turkey Salad Platter

    I make this every year with the leftover Turkey. I double it and it's still gone within 24 hours!

    3 Cups diced Turkey

    1 and 1/2 cups sliced celery

    2 cups Sea Shell Pasta macaroni, cooked and cooled

    6 eggs boiled and diced

    1 6oz jar stuffed green olives with pimentos sliced plus 4 tablespoons of the liquid.

    1 and 1/2 cups Mayo....(not Miracle whip)

    1/4 cup fresh squeezed lemon juice

    4 Tablespoons McCormick's, Salad Seasoning (a must!)

    Combine and Chill.
