YAMS or SWEET POTATOES: need recipes

I usually do the crunchy topping with Brown sugar, flour, butter and nuts, but I recently tried a recipe where you peel the yams (you can add onions, carrots, potatoes, squash chunks, rutabaga chunks), toss in olive oil with 12, yes 12 garlic cloves, and bake in the oven. Then sprinkle with sea salt and pepper for a delicous savory root veggie dish. It is a nice change from the sugary traditional dish.

A&W, imo the best recipe for yams...
Sweet Potato Crunch:
3 Cups mashed yams
1 Cup brown sugar
1/2 cup butter
2 eggs
1/3 Cup milk
1 Teaspoon vanilla
Mix together and put in a casserole dish.
Topping:
1/3 Cup butter
1 Cup brown sugar
1/2 Cup flour
1 cup chopped nuts (I use walnuts)
Mix together and spread on top.
Bake @ 350 for 40 minutes.

Awake and watching....I made a dish last year that was to die for and now cannot find the recipe. It basically was any recipe for sweet potatoes but it included 2 bananas roasted for about 20 minutes at 350 with the skins on, then peeled and mashed in.
I will do it again this year without the recipe......you might want to try it. (No leftovers with this dish)

Hmmm the only way I really like them is just baked slow in their jackets, then lots of butter, and little salt and pepper.

Yams and sweet potatoes are my new staple. I can't stomach potatoes any more. My simplest recipe is to peel and cube them, boil them and mash them like potatoes. Instead of butter, I use olive oil and a little pepper. No milk.
I've also sliced tofu, sweet potato and zucchini in half-inch slices, dipped in egg and a mixture of bread crumbs, parmesan cheese and spices. I broil on both sides then serve on a platter, artfully arranged. Pour sphagetti sauce over top with a little more cheese. HUBBY WILL EAT TOFU this way. First hit tofu recipe. Oh, I think I parboiled the yam for a few minutes so it would cook the same as the rest.
I hear sweet potatoes are a little richer in vitamins and good stuff. From experience, they oxidize quickly, so make up your mind what you are doing with them first!

I love just plain baked sweet potatoes too, or mashed with a little orange juice. But for Thanksgiving I got this recipe from Sunset magazine. Microwave 5 pounds of sweet potatoes until very mushy. Let cool. Scrape out of the skin into a bowl. Add about 1/2 cup diced dried apricots and 1/4 cup or more of bourbon. Mash until you have the texture you like. Add some orange juice if needed to make it more creamy. Put in a buttered casserole dish and just before dinner stick it in the over for half an hour with the other things that need to heat up. About 350 degrees.

I usually use two yams which i roast...one I then put in the blender and whip with milk and pumpkin pie spice mixture. The other I slice into chunks. Then I pour both into a bowl and top with m'mellows, and bake. Pretty easy and tastes goooda
