YAMS or SWEET POTATOES: need recipes

    Here's mine from the other thread. I have a candied one at home... just buy the frozen ones and then put sugar/water syruped and cinnimon on top.

    • 4 cups sweet potato, cubed
    • 1/2 cup white sugar
    • 2 eggs, beaten
    • 1/2 teaspoon salt
    • 4 tablespoons butter, softened
    • 1/2 cup milk
    • 1/2 teaspoon vanilla extract
    • 1/2 cup packed brown sugar
    • 1/3 cup all-purpose flour
    • 3 tablespoons butter, softened
    • 1/2 cup chopped pecans
    1. Preheat oven to 325 degrees F (165 degrees C). Put sweet potatoes in a medium saucepan with water to cover. Cook over medium high heat until tender; drain and mash.
    2. In a large bowl, mix together the sweet potatoes, sugar, eggs, salt, butter, milk and vanilla. Mix until smooth. Transfer to a 9x13 inch baking dish.
    3. In medium bowl, mix the sugar and flour. Cut in the butter until the mixture is coarse. Stir in the pecans. Sprinkle the mixture over the sweet potato mixture.
    4. Bake in the preheated oven 30 minutes, or until the topping is lightly brown.

    Nutritionally, sweet potatoes are a better choice. Some people use "yam" and "sweet potato" interchangeably, but they are not the same. I agree with the poster who said just bake them and let your guests top them as they see fit.

    Potato

    Well, Girl Potato and Boy Potato had eyes for each other, and finally they got married, and had a little sweet potato, which they called 'Yam.' Of course, they wanted the best for Yam.

    When it was time, they told her about the facts of life.
    They warned her about going outand getting half-baked, so she wouldn't get accidentally mashed, and get a bad name for herself like 'Hot Potato,' and end up with a bunch of Tater Tots. Yam said not to worry, no Spud would get her into the sack and make a rotten potato out of her! But on the other hand she wouldn't stay home and become a Couch Potato either.

    She would get plenty of exercise so as not to be skinny like her Shoestring cousins.

    When she went off to Europe, Mr and Mrs. Potato told Yam to watch out for the hard-boiled guys from Ireland.
    And the greasy guys from France called the French Fries.

    Yam said she would stay on the straight and narrow and wouldn't associate with those high class Yukon Golds, or the ones from the other side of the tracks who advertise their trade on all the trucks that say, 'Frito Lay.'

    Mr. and Mrs. Potato sent Yam to Idaho P.U. (that's Potato University) so that when she graduated she'd really be in the Chips.
    But in spite of all they did for her, one-day Yam came home and announced she was going to marry Tom Brokaw.Tom Brokaw! Mr. andMrs. Potatowere very upset. They told Yamshe couldn't possibly marry Tom Brokawbecause he's just.......Are you ready for this?Are you sure?**OK! Here it is!****A COMMONTATER
