I remember that I really liked the Lion in Winter - and also another movie about Henry II and St. Thomas - don't remember the name. I saw Metropolis, I guess it was a landmark film, but it was so dark and boring, I guess I'm a Philistine.

I could never pick just one. Many or most of the above are great.
I tend to really like movies of certain directors. Like:
David Lean - (Lawrence of Arabia, Bridge on the River Kwai, Dr Zhivago, etc.)
Ridley Scott - (Alien, Blade Runner, Thelma & Louise, Black Hawk Down, etc.)
John Sayles - (Matewan, Lone Star, Blood Simple, etc)
The Coen Brothers - (Fargo, O Brother Where Art Thou and hopefully I will like "No Country for Old Men" which we are going to see this afternoon)

I agree with Akira: The Matrix is the best movie of all times. It was part of my awakening.
I also agree with liquidsky. Donnie Darko has it charms too.
And let's not forget Memento.
