Some think it was a Scribal error - the word gopher, for which there's no translation (hence they don't know what type of wood it was) could actually have been kopher - which means pitched wood

    ie wood treated with pitch!

My own guess as to what type of wood it was would possibly be cedar because it was plentiful in that region but if my theory above is wrong then it could have been gophar wood - ie cypress.

Edit - actually I'm sticking with cedar as apparently it is rot resistant!

    Bloomin scribes messin' wit' vowels!

    So what do I win???

If the ark was treated with tar, that would have slowed down the decay process. I can imagine it took a lot of work to make it last 120 years, as houses of that age require vigilance to prevent rotted wood and replace boards that have rotted.

However, once the vessel wound up floated, it would have started rotting quicker. Even with the tar, it is not going to last a whole year totally submerged without at least something resembling a leak. A tiny leak might not have been enough for water to reach the inside of the ark, but it would have exposed the wood to rotting. And then it would be a matter of time before it would have become structurally unseaworthy.
