Today I promised my family aebleskivers, eggs and sausage.
Aebleskivers require a funny pan, but you can use your favorite pancake batter, or even cornbread batter (my favorite). Although I think I'm going to make sweet potato aebleskivers.
If you take a nice big link sausage and make three or four deep slits down the length of it, then slice it crosswise and fry it, you get sausage flowers.

Aebleskivers are a lot of fun and you can find the pan in most second hand stores. To make them, use a regular pancake batter but add a lot of minced apple and some lemon juice. Let the batter sit for a bit while you preheat the cast iron aebleskiver pan. When it is hot, but not too hot, put plenty of butter in each little depression. Put in enough batter to sill the depressions about 2/3 full. When ready to turn (puffed up, bubbles around the edge, top drier than usual for pancakes) use a fork to pull up the bottom of the pancake and turn it over so the uncooked side of pancake is on the bottom. It makes these little round puffy pancake balls, very fun for breakfast.
Here's another old fashioned but still delicious breakfast. Preheat the oven to 350 degrees F. Pick out your pan and spray it - the size depends on the number of people you are feeding. For an 8X8 inch square pan use 8 slices of your favorite bread (I like sourdough), some shredded cheese and some sliced ham. Put a layer of bread neatly in the bottom of the pan, top with some shredded cheese and some sliced or cubed ham. Put the remaining bread on top. Beat together 2 cups of milk and 4 eggs. Pour carefully over the bread. You want the bread to completely absorb the milk and eggs, so you might wait a bit and add more as it gets absorbed. This can stay over night in the refrigerator if you want to prepare it ahead. Bake in the oven until it is puffy and brown, and a little knife inserted in the center comes out clean. It's really good, light like a souffle, nice and salty and flavorful, easy to serve, the leftovers are good too. Minced scallions are good in it too.

That sounds yummy. I've made some simple ones and fancy dancy ones. All perfect for a no fuss breakfast.

Sunflower seeds are optional, they just add a little flavor (and crunch). Sesame seeds work too, or even both!
I'm a bachelor so I can confine my diet to foods that are healthy, tasty, cheap, fast and easy.

Pig Tail Stew Ingredients: 2 lb PIG TAILS CUT INTO 2-3 IN -PIECES 2 tb FAT OR LARD 2 sm ONIONS SLICED 1 lg CARROT CUT IN THICK SLICES 1/4 c CELERY DICED 6 tb FLOUR 2 c HOT WATER 1 c CANNED TOMATOES 3 WHOLE CLOVES 3 BAY LEAVES SALT AND PEPPER
Pig Tail Stew Instructions:
WASH THOROUGHLY TWICE IN BOILING WATER.
RINSE IN COLD WATER AND DRY ON PAPER TOWELS.
BROWN LIGHTLY IN THE FAT IN A DUTCH OVEN.
ADD FRESH VEGGIES AND COOK FOR 8-10 MINUTES.
BROWN FLOUR IN SKILLET AND SPRINKLE OVER THE MEAT AND VEGETABLES.
ADD REMAINING INGREDIENTS.
BRING TO BOIL, COVER AND SIMMER UNTIL MEAT BEGINS TO FALL FROM BONES, ABOUT 2 HOURS.
ADD MORE SALT AND PEPPER IF DESIRED.
SERVE WITH BOILED POTATOES, GREEN BEANS AND RED CABBAGE.
SERVES 4.
