Sounds good. And thick. If you left out the potatoes, it would probably be good over rice. (I don't like starch on starch.)

Why doesn't that sound very appetizing?
Here's a recipe for a pork and potato slow-cooker stew: Peel and cut up 2-3 large potatoes and place in slow cooker. Cut up a pork roast into 1-inch cubes; set aside. Mince 2-3 peeled garlic cloves, the grated rind and juice of one lemon, a tablespoon of dried sage (or 1/4 cup minced fresh sage leaves), and salt and pepper. Place this mixture into the pork cubes and mix together; place meat over the potatoes in slow cooker. Cover cooker and cook on low for 10 hours. Serve.
Variation: Rub a whole pork roast with garlic/sage/lemon mixture before cooking. Roast in slow-cooker 10 hours. Slice and serve, using the herbed meat juices as gravy over mashed potatoes.

Well, just finished a bowl. I must say I think this is the best stew I've ever had. Much better than the canned stuff. ;-)

I make a pretty simple beef stew. I'll brown about 1 1/4 pounds of stew beef cubes and put them in the crockpot, add baby carrots, crimini mushrooms, and a chopped red pepper. I don't measure amounts, just eyeball it. Add a cup of red wine and top it up with tomato sauce. Add salt, pepper, marjoram to taste. I dish it out on to a bed of basmati rice.
