    Mom used to make cornbread and beans with onions all the time. I came to dislike them. Lately, however, I've been missing them.

    Hi folks,

    I love cast iron pans. I have my mother's old breakfast frying pan and I have others I've bought at thrift stores and yard sales. They can get a little TOO seasoned in my opinion. I always wash mine with soap and water. The secret as I think Bizzybee said is to not let them soak.

    When I buy a really yucky used cast iron pan, I usually put it in the oven during the cleaning cycle. It cleans all the corrosion off the pan and it's like new. Then I have to wash it - rust forms right away - and after I wash and dry it, I rub it with a lot of oil and leave it on a low flame for a while. If you do that a couple of times, the pan is seasoned again and works just great.

    I would never use soap in a cast iron pot. There's no need to.

    Unless you leave food sitting in it for long periods of time after it is cooked, washing with soap is useless.

    The important thing is to rince it well with a stiff brush (not metal) or heavy duty plastic scrubbing pad to remove any food still attached. Once the food is gone, let it dry (I heat mine for a few minutes again on the stove) and then apply a little bit of vegetable oil to just coat it.

    To soap or not to soap...that is the question, I guess. I wish I had my mom's old pans...she surely loved her cast iron.

    I LOVE my two burner cast iron grill...great for grilling, gets soooo hot. But what a chore to clean!!!! I bought rock salt to scrub it. But I am going to try the burning off in the oven.
