Where does the word "bloaters" come from?
Is it that the bodies bloated with gas during the preservation process?
Talking of preserved fish - has anybody tried the preserve of herring from norway.
It is left in barrels to ROT. The stench is awful but taste divine. Rather like the fungus that looks like steak, smells of poo when you cook it but tastes of stewed apples.

I have tried Lutefisk, the Norwegian rotten fish the consistancy of pudding. Only if I were starving to death in a snowbound cabin and did not have a gun to shoot myself with would I eat it.
I've read about lutefisk and surstromming - one person said they smell like fresh horse dung!
I don't know why they're called bloaters, Hamster.
Maybe because their bellies are bloated?

I have never tried head cheese nor chitterlings. Love bacon flavored scrapple, though! I slice it thin and fry it to a crisp like bacon, then dip it in my sunny side up eggs. YUMMY!
