Cajun head cheese, that sounds like it is worth a try. How would it be listed on a restaraunt's menu?
Head cheese is not as finely ground as potted meat, which is more similar to a hotdog.
Is it made of milk?
I once tried a Spanish cheese which has millions of tiny crawly maggots in it.
Nowadays the flies that lay the eggs have to be bred in sterile conditions. Have you ever tried biting into a cracker that was actually MOVING?

Brawn I know it as. In France they make something similar, by boiling a calf's foot for seven hours, with finely chopped mixture of different cuts of pork beef and veal.
You then put it in a bowl to set. Deilicieux! Snails are great too.

Just looked it up -
Made by pressing chopped meats down in a jelly to set. Since cheese is also pressed down to shape it maybe that's why they share the term.
As mentioned above in french it is fromage de tete. As my French dictionary is not etymological, maybe Narkissos or so, could tell us the verb "fromag <er>?" originally comes from.

This reminds me of an SCTV sketch done by John Candy ... in a pig nose holding a package of head cheese saying:
"Head Cheese salad. Head Cheese sandwich. Revolting, but it sells!"
I can't eat this stuff. But then I grew up on a farm so I know where those pig heads (snouts, ears, etc) have been! (Same as chickens feet!)

Just Googled it. It sounds very much like brawn, except for different herbs and that the yummy bits like brains and eyeballs are left in for brawn.
I love a good brawn and have made it many times.
I'm frightened to eat it since my heart attack. It's quite fatty.
