    I've never had sweet potato pie... is it like pumpkin pie?

    It's nastier than pumpkin pie. Has a slimy texture, and a flavor that is bland. Think of it like a pureed sock.

    Sweet potato pie is very simular to pumpkin. Fantastic with a little dollop of whipped cream on top!

    This is how it's done.

    Ingredients: Sweet Potato Pie

    • 4 ounces butter, softened
    • 2 cups cooked and mashed sweet potatoes
    • 2 cups granulated sugar
    • 1 small can (5 ounces, about 1/2 cup plus 2 tablespoons) evaporated milk
    • 1 teaspoon vanilla
    • 3 eggs, beaten
    • 1 1/2 teaspoons cinnamon
    • 2 prepared pie shells, unbaked
    Preparation:

    Mix butter, potatoes, sugar and evaporated milk until well blended. Add vanilla, eggs, and cinnamon; mix well. Pour into the prepared pie shells. Bake in a 350° oven for about 1 hour, until set.

    You can add chocolate pieces (unsweetened), toasted pecans or peanuts to the crust if you wish.

    John Doe, I don't know where you found that kind of pie.

    Must have been marinating in someone's attic for a couple of months.

    Undercover, consider adding sour cream or yogurt to your batter.

    John Doe, the bread is made with cracklins (fried pig skins with a little meat attached). You won't need any oil if you use cracklins.

    Cameo, use TWO eggs.

    I may break out my cast iron skillet and try some tonight, along with some real butter.

    Just don't put the butter in your batter.

    It will turn out too greasy if you do that.

    However, putting the butter on your cooked bread shouldn't be a problem.

    I love making cornbread in the cast iron skillet. I always add a tablespoon of Fresh NC mountain honey to the batter....mmmmm!

    My hubby loves crumbling it up and adding milk to it and eatting it all out of a bowl.
