Seriously, The only thing my husband and son ask for is lots of pumpkin pies. I've never made a cake just for x-mas. If you get some good ideas, I may do it though.....

Most cakes can be baked and frozen.
Thaw out and decorate about a week before the big day.
Voila!

Doesn't freezing it give it a funky taste? I remember freezing the top layer of my wedding cake (first marriage) and on the 1yr anniversary thawing it and it was horrible! Threw it out. (That should have been a sign right then, but i digress....)
I'd rather make it the day before and have it fresh.
