    Heh - I just ate shrimp Pad Thai at lunch. They left out the scrambled egg though, which disturbed me deeply.

    There's a guy who works here who is allergic to wheat gluten, I believe he calls it celiac disease.

    I started researching wheat gluten and came upon the term seitan.

    You all know where that led.

    End of story.

    Pad Thai needs garlic, chile, ketchap manis (sweet soy sauce) a little fish sauce (can be deleted) and the final secret is lime juice. Don't forget roasted crushed peanuts. Damn I love Bangkok!
