They have identified their target market. As opposed to catering to vegetarians, it sounds like this restaurant caters to humanitarians.

This is doubtfulnews but it does make me wonder what type of wine they serve with it. Maybe it depends on what race or gender the meat came from.
Anyway, I don't have a problem with it so long as it is cooked to the proper temperature and properly kept and handled and from an approved source. (sarcasm)
