    Well now that I have your attention, just how big is the Turkey your going be serving for Thanksgiving? 10LB. of 20. or more. And what do you serve with it? Name your favorite side dishes.

    For our small family, any bird over 12 pounds is a waste. I do not like leftovers very much.

    I make very good mashed potatoes, creamy, buttery, yummy. My mom makes the best mashed potatoes I have ever tasted, mine are getting there, been trying to imitate hers...

    I also make another potato side dish = gratin dauphinois, mostly for me, because that's the only time I can have it = my husband does not like it...

    Probably Butternut Squash, or green beans, or both... Stuffing, cranberry sauce, gravy.... A huge mixed salad dish before all that, then cream puffs filled with vanilla cream and chocolate mousse, and an apple-cranberry pie. A good red wine with dinner : Chateauneuf du Pape, already bought...

    My in-laws are Cuban, so we have an international food tour-de-force:

    Fried Turkey
    Sugar Cured Ham
    Mojo piglet
    Whole smoked salmon
    Moros (black beans cooked in rice)
    Fried plantains - both green and ripe
    Avacado salada
    Yucca w/ mounds of fried garlic cloves
    Mashed potatoes
    Cuban pork tamales
    Massive San Grias

    Usually there are about two dozen family. I don't speak much Spanish - as if I'd get the chance if I did. Imagine 24 people having 24 conversations all at the same time, all at the top of their lungs, everyone talking, no one listening. Crazy Cubans. When I'm done eating, I stand up and say as loudly as possible, "It was wonderful. I wonder what the people living under Castro are doing right now?" Then I run outside as fast as possible before the REAL screaming starts. To say these Cuban expatriates hate Castro is a gross understatement.

    Rats!!!!!! Before I opened this thread, I thought I was gonna find out how big Francois' was. Oh well.

    Talkin turkey, huh? I've been invited to a coworker's for Thanksgiving (my remaining family lives far away) and we are gonna do two turkeys. She is having mostly men there and you know what big...er...appetites men can have. We are gonna do all the fixins, including the green bean/crispy onion one, mashed potatoes, mashed yams with marshmallow...the whole nine yards. I used to make a pretty good cranberry bread that I plan to take over there. It's been years, maybe I should practice this next week...

    We have already bought ours and put it in the freezer(21.92 pounds.) Wer'e having mashed potatoes with giblet gravy,green beans,corn on the cob and hawaiian sweet rolls with it.

    the largest turkey I ever cooked was a 27 lb. bird and it was the best bird I ever cooked and it was so good and juicy. and it took all day to cook I had it in the oven at 6:00a.m. ready to cook. it was ready by 5 p.m.

    It was sumptuous. Fit for a king and family.... I served it with sweet yams, mashed potatoes, with gravy so good I can taste it now. and sweet baby peas Le Sieur. carrots with honey, butternut squash with butter true maple syrup and cinnamon. my stuffing, red wine, and beer. and pumkin pie and apple pie, or lemon merigune pie. yummy yummy.

    Tis the season to be hungry and jolly and F A T !!!!!

    Wow Francois, after a meal like that, a nice cup of cuban coffee followed by a genuine cuban cigar would be just heaven!!

    Gonna fry my turkey this year...maybe apple juice and cajun seasoning this year. We always do the standard dishes like green beans, yams etc..the only thing different this year will be my stuffing. I have Minnesota long grain wild rice that I got while in the Greater North and that Eye was good enough to bring me on her journeys to the Greater South. It should be quite yummy and something different than my usual homemade stuffing for sure.

    Last year, we cooked a 46+ pound turkey, and had to borrow a commercial sized pan to do it. It was a whopper and filled the oven! Wonderful too. Home grown by Princess' in laws. We had 27 last year........or maybe it was 29.

    This year we are having a smaller group, since some of the kids are going to their in laws for the day. But I will probably cook about a 20 pounder. I will have 13 for dinner and 16 for pumpkin pie.

    Our menu:
    turkey, stuffing, gravy
    mashed potatoes
    candied yams
    home made cranberry sauce
    some kind of green veggie
    champagne
    Pumpkin pie with whipped cream and coffee
    Last year we had Princess' pecan pie too (boo hoo.........she won't be there this time)
