Thanksgiving Pies

    Since Thanksgiving is upon us I thought I would start a thread on pies. I make the same pie pretty much every year cuz it always disappears and I don't have to worry about eaitng Thanksgiving pie on Xmas day..please share your fave pie recipe and do try this version of classic pecan pie.

    Chocolate Pecan Pie

    3 eggs, lightly beaten
    1/4 cup sugar
    1 cup Karo Syrup or other light corn syrup
    2 tbsp margarin melted
    1 tsp vanilla
    3 cups pecans 2 minced, 1 whole. Use whole pecans to cover top of pie
    1/4 cup Ghiradelli chocolate chips
    1/4 cup Ghiradelli white chocolate chips
    1 9 inch unbaked pie crust

    Heat oven to 350. Combine first five ingredients together and mix well. Then add minced pecans and chocolate chips. Pour in pie crust and top w/remaining whole pecans. Bake 50-55 minutes.

    The best pumpkin pie in the world!! This was my mother in law's recipe. She worked for years at the University of Washington Hub, and gave them her recipe too. (you must use these spices.........not the pumpkin pie spice you can buy already mixed) For this recipe, you can use the light canned milk, and skim regular milk. Not as rich, but it still works.

    I get requests for this recipe every year. Everyone in our family uses this one. It really is the best. Most recipes require 4 eggs.........this one is 6.

    Evelyn's Pumpkin Pies
    3 cups pumpkin (one large can..........the BIG one)
    1 1/2 cups sugar
    1 teaspoon salt
    1 teaspoon ginger
    1/2 teaspoon nutmeg
    2 teaspoons cinnamon
    6 slightly beaten eggs
    1 large can evaporated milk
    2 cups regular milk
    Combine pumpkin, sugar, salt and spices thoroughly. Add eggs and milk, and mix completely.
    Bake at 400 degrees for 10 minutes and then 350 degrees for 50 minutes.
    (makes two 10" pies or three 8" pies)

    After countless unsuccessful tries, I finally have mastered the art of pie making...

    Hey, I am French, we don't have pies over there...

    Well, I still have problems with blueberry pies, always too runny... But my apple pie is the best I have ever tasted, the crust is flaky and golden, and buttery... I add very little cinnamon and other spices and let the apple taste come through... I use 2 or 3 different kind of apples... For Thanksgiving, I add one cup of fresh cranberries to the apple feeling.... Scrumptious...

    I've added cranberries to apple pie too. Wonderful!! I recommend it.

    9-inch unbaked pie crust

    1 cup light corn syrup

    1 cup firmly packed dark brown sugar

    3 eggs, slightly beaten

    1/3 cup butter, melted

    1/3 teaspoon salt

    1 teaspoon vanilla

    1 heaping cup pecan halves

    Heat oven to 350 degrees.

    In a large bowl, combine corn syrup, sugar, eggs, butter, salt and vanilla; mix well. Pour filling into unbaked pie crust; sprinkle with pecan halves.

    Bake at 350 degrees for 45 to 50 minutes or until center is set. (Toothpick inserted in center will come out clean when pie is done.) Cool. If crust or pie appears to be getting too brown, cover with foil for the remaining baking time.

    You can top it with a bit of whipped cream, but even plain, nothing tops this!

    Serves 8 to 10

    Good Ole Boy/Gal Pie

    Ingredients

    1 9 inch deep dish pie crust

    1 cup cling peaches

    1 cup cooked and mashed sweet potatoes

    2/3 cup evaporated milk

    1/2 cup brown sugar

    2 eggs lightly beaten (not egg abuse!)

    1/2 tsp salt

    1/2 tsp of pumpkin pie spice

    1/2 cup chopped pecans

    Preheat over to 350. Mix ingredients and put into pie shell. Put pecans around edge of pie. Bake for 40 minutes or until golden brown.

    Apple-Butter Pumpkin Pie with Streusel Topping

    1-cup pumpkin

    1-cup apple butter (better if homemade)

    1/4-cup packed dark brown sugar

    1/2-teaspoon ground cinnamon

    1/4-teaspoon ground ginger

    1/4-teaspoon ground nutmeg

    1/4-teaspoon salt

    3 eggs, lightly beaten

    1-cup undiluted evaporated milk

    Preheat oven to 375. Combine ingredients in order given. Pour into deep-dish pie shell.

    Bake 50-60 minutes, or until knife inserted two inches from center comes out clean. Top with streusel topping. Bake for additional 15 minutes.

    Streusel Topping

    3-tablespoons softened butter

    1/2-cup flour

    1/3-cup dark brown sugar

    1/3-cup chopped pecans

    Mix all together with fork or piecrust knife. Sprinkle on top of pie after baking for 50-60 minutes.

    ENJOY!!

    I just put this thread in my favorites. yummy I don't have a special pie recipe but I do make a desert along with the pies. 
    Just in case someone doesn't like pie. Crust: 1 cup flour + 1 stick of butter. Mix until it forms a ball, spread into the bottom of 
    a 9x13inch baking pan and bake in 350 degree oven for 10 minutes..............allow to cool. 
    Next..... one pkg cream cheese 1 cup cool whip 1 cup powder sugar mix together until no lumps, spread over crust.
    next.......... prepare 1 large pkg of vanilla pudding and spread over cream cheese mixture. cover with thin layer of cook whip and garnish with chopped walnuts (peacans if you prefer) cool in fridge until ready to serve.
