Thanksgiving Pies

    When I first came across the recipe long ago my first thought was, that sounds strange apple-butter and pumpkin. But its a great pie. We enjoy it served chilled with a little dollop whipped cream.

    I will have to share my Christmas cake with you sometime, Hummingbird Cake. Wonderful cake.

    Cassi, one question...how many hummingbirds must one put in the cake and how do you catch the little bastards in the first place? *LOL* I would love to have the XMA cake recipe. BTW, my room mate is going to make your pie for our TKSGVNG feats.

    Cassi, my wife makes a regular pumkin pie, with the pecan struesal type mixture poured over the pie crust before adding the pumpkin mixture. It is really good.

    Can't reveal the secret of catching hummingbirds!! Actually now this is a secret, the way I just broke my tailbone was trying to catch one of the little shits flying around my kitchen!! LOL Give me a few and I will either post the most secret recipe here or send it to you!

    I have no clue as to why they call it hummingbird cake, its main ingredients are, walnuts, pineapple and bananas! With a cream cheese icing! Great cake topped off with more walnuts.

    Here you go Valis......

    Humming Bird Cake

    3-cups flour

    2-cups sugar

    1-tsp salt

    1-tsp baking soda

    1 and 1/2-tsp cinnamon

    3 eggs beaten

    1 and 1/4 cup of salad oil

    1 and 1/2 tsp vanilla

    1 8oz can of crushed pineapple (do not drain)

    2-cups of chopped bananas

    2- cups of chopped walnuts (one goes on top of icing)

    Hand mix.

    Combine dry ingredients then add eggs and salad oil. Stir until all ingredients are moistened. Then add remaining ingredients. Mixture will be thick and lumpy.

    Pour into greased and floured bunt pan.

    Bake for one hour at 350. May need additional 15 minutes depending on ovens. Please keep in mind the ingredients if checking doneness with toothpick, watch to see if side of cake separates from pan to assure doneness because the toothpick will usually come out wet instead of dry due to the bananas.

    Icing

    1-8 oz Cream cheese (softened)

    1/2-cup butter (softened)

    1-box powered sugar

    1-tsp Vanilla

    Beat until light and fluffy. Sprinkle extra cup of walnuts on top

    Enjoy!!

    PS This cake won me first prize in a cook-off in Williamsburg Virginia

    Drumstick Pie

    Shell:

    1/3 cup chocolate syrup
    1/2 cup mini marshmallows
    1 (1.05 oz) chocolate bar
    2 cups Rice Krispies
    1/2 cup salted peanuts, chopped

    Melt syrup, chocolate bar and marshmallows in microwave or double boiler. Mix in cereal and nuts. Press into a buttered 9 inch pie pan. Freeze.

    Filling:

    1 (3 oz) pkg cream cheese
    1/3 cup creamy peanut butter
    1/2 cup milk
    1 (9 oz) whipped cream topping, thawed
    1 cup powdered sugar

    Combine cheese and sugar and mix until creamy. Add peanut butter. Beat until smooth. Blend in milk. Fold in whipped topping.
    Pour into shell and sprinkle with chopped nuts.
    Freeze overnight.

    I usually drizzle extra chocolate syrup over the top of it before serving.

    For Thanksgiving dinner, I made Valis' Chocolate Pecan Pie, and Cassiline's Apple Butter Pumpkin Pie .... I also took a Hummingbird cake. This is the first year that I haven't had to bring home leftovers! Thanks Guys!
