In Britain we have the habit of cooking beef in beer, simmered slowly for several hours. It is simply iresistable. Also, I see you plan to serve on the same dish with other items. Over here, a good stew should include diced potatoes and other vegetables in the stew itself. Thats what "stew" means.
What kind of beer ?
Real ale, the dark beer, generally a good local bitter, something rich. Try putting "beef in beer" in quotes in a google search.
I cook mine in Guinness. Serve it over noodles or garlic mashed potatoes.
I put beer in my "American" beef stew. I was out of red wine one cold February day, which is how I discovered that beer was an excellent alternative for a completely different flavor. One day, I didn't feel like making a salad, and tossed the spinach in the stew to cook instead. That was also amazingly different (and delicious). I serve beef stew with any kind of fresh bread or biscuit like buttermilk biscuits, cornbread, or really crusty sourdough french bread, and of course with beer. Shoshana

In Britain we have the habit of cooking beef in beer
Me too, along with Meaux mustard, bay leaves, onion, garlic -- irresistible flavors! Then, the last 10-15 minutes, I put thick slices of French bread dipped in melted butter and Meaux mustard on top of the stew and stick it in the oven. The butter & mustard top gets all crunchy and delicious and the bottom soaks up the juices of the stew.
And, yes, it HAS to be dark beer. MMMMMMMMMMMM.
