The kebabs we're talking about are slices of meat from a lump of formed meat (beef or lamb) on a rotissery in fromt of a gas flame. As the outer layers are cooked, they are sliced off and put on a layer of salad that tops a piece of lebanese flat bread. After your sauce of choice is added, it's wrapped up, crisped against the gas burner and put in a bag, from which you then eat yon delicate morsel.
Sounds almost like a gyro, except for the "crisping the bread" part.
I'll have to find a place around here that serves Turkish kebabs.
