I find it hard to call Mormon's fundamentalist, when they don't even use the standard bible cannon, for the same reason I don't call Jehovah's Witnesses, or Amish fundamentalists. They have taken a divergent path from mainline protestantism. They are repressive, far more then most fundies.

Fundamentalism isn't restricted to those using the Bible canon, hence the frequenct references on the evening news to acts of terrorism by 'fundamentalist muslims'.
I'd call Latter Day Saints fundamentalists for exactly the same reasons I'd call J.W.s or Pentecostals fundamentalists. The term refers to a particular mindset, not to a particular book used.

A conservative holds traditonal values dear, yet isn't one of those running around thumping the bible talking about a 6 day creation and all non-(fill in denomination here) going to hell. Is that a difference?

I guess I don't see the problem for a Christian - I'm a Christian and I think it would be REALLY cool to find life elsewhere.
The bible addresses MAN here on this earth only - that doesn't mean there is not other intelligent life elsewhere. If I write a letter to my daughter in Nevada does that, by default, mean I don't have other children elsewhere? Of course not.
