I chuckled at the "not very spiritually satisfying" comment, too. Amen and amen, eh?!!!
Perhaps the gentleman will come back some day because he enjoyed the conversation. At that point you might tell him that you have experience with Jehovah's Witnesses but that they are not what made you into the person he so obviously related well to during your Bible discussion.

I hope you don't feel guilt over not being able to help that man with his spiritual needs, because you yourself are a person who has been harmed and trying to find your own way.
I think you showed great restraint and personal growth by (basically) saying that you don't have all the answers, and that spiritual things are personal. I am glad that you didn't take that on yourself.
After being taught that the jw is "the one true christianity" and so forth, you obviously doubt that, and don't want to return to that sort of thinking. I feel that is admirable and strong.
You sound like a very open minded, non-judgemental person. Two qualities that I find admirable!

Don't worry about that man to whom you didn't feel the ability to tell the truth, PaulE....there'll be time when it's right. We all get sore feet from kicking our own behinds occasionally, when we feel regret over lost opportunities, but honestly, when you first come out, you're in the process of healing and attempting to overcome all the deeply ingrained false doctrines and practices of the borganization.

I was just reading an article on the Watching the Watchtower site, and it said that basically the way you did it is the best way. It said that bringing up lots of doctrinal arguments and/or dirt about the org will just arouse their defenses. The best way is just to be exactly like you were, basically, kind and good, so they can see that people outside the org aren't evil demons. So maybe it was just a good intuition that kept you silent, and not old bad programming.

Give yourself some time, friend. You will soon find your voice. Since I became "apostate" I have had more success in bringing the real truth to those associated with the org and have them accept and understand it than I ever did inside the org trying to bring new ones in.
