    Chinese Five Spice
      Ingredients:
    • Ground Anise 2 Tbsp
    • Ground Ginger 2 Tbsp
    • Ground Cinnamon 2 teaspoons
    • Ground Fennel Seeds 2 Tbsp
    • Ground Cloves 1 teaspoon

    You can also throw in some hot dried red peppers for extra spicy..

    I enjoy cooking now and have a reputation as a good one, but that wasn't always the case. I didn't learn how to cook at home and when I moved out with a couple of room mates, I was a nervous wreck when it was my week to cook. I had a great, basic cook book and still refer to it though it's 30 years plus old, burned, and spattered with food!

    I'd recommend getting a good cookbook; Joy of Cooking is one of my favorite. Though you can find elaborate recipies, there is a lot of basic information on how to do simple things.

    Don't worry about the disasters; they're part of cooking and it takes practice.

    I still have some things from my wedding shower a year ago that are in storage. I think I may have even been given a church cookbook from my husband's aunt. I may look for it later to see if I can find some easy ideas in there.

    Since I cannot be on my feet for very long preparing meals we bought a crockpot. By far this was a great investment. I use it 2 - 3 times a week. Meals take me about 5 minutes to throw everything in the pot. I walk away and go back and stir it every hour or so.

    So far everything I have made has been great. And hubby is happy.

    Usually when I cook red meat it winds up being tough as leather. With the crockpot it is always tender and wonderful.

    I'm always on the lookout for new recipes. Here are 2 of my favorites:

    Walter

    Red Hot Spareribs

    Ingredients

    6 Cloves Garlic crushed
    2 Medium cooking onions chopped
    2 1/4 Cups Tomato Sauce
    1/3 Cup Red Wine Vinegar
    1/3 Cup Worcestershire sauce
    2 Bay leaves
    1/4 tsp dried oregano
    2 tsp Cayenne
    1/2 Cup Brown Sugar
    4 lbs Meaty Spare ribs

    Put garlic, onions, tomato sauce, bay leaves, vinegar, worcestershire sauce into a large pot. Bring to a boil, then reduce heat and simmer uncovered for 30 minutes.

    Stir in oregano, cayenne, and brown sugar.

    While sauce simmers cover ribs loosely with foil and bake at 450° for 15 minutes. Reduce heat to 350° and pour sauce over ribs. Cover again loosely with foil and bake 45 minutes. Remove foil, baste, and bake another 30 minutes.

    Potato Salad

    Ingredients

    4 Cups peeled, cooked potato cubes
    1 Cup Cheddar cheese, cubed
    1 Cup Sliced mushrooms or sweet peas
    1 Small onion sliced
    1 tbls dried parsley flakes
    1/2 Cup Miracle Whip
    1/2 Cup Sour Cream
    1/4 tsp Garlic salt
    1/4 tsp black ground pepper

    In a medium mixing bowel combine potato (cooled), cheese, mushrooms, onion, and parsley. Set aside.

    In a small bowel combine Miracle Whip, Sour cream, garlic salt, and pepper.

    Pour dressing from small bowel over contents of medium bowel. Mix lightly.

    Cover with plastic wrap and chill in refrigerator 1/2 hour before serving.

    Makes 4 servings.
