Blondie, I've never tried butter but I've seen folks put cream cheese on them so I suppose that would work.
Tex, In my Mardi Gras recipe mag it said to allow for at least 2 beignets per person. LOL They've got to be high. I think they meant 2 dozen. I know I'm good for at least that many.

Hey all,
Fat Tuesday is rapidly approaching and following last night's Mardi Gras festivities, I find myself stricken with a major case of the hungries for beignets of the Cafe DuMonde kind. What's a Yankee to do but make her own. So...here is the recipe I use. They taste pretty authentic. Anyone here have a better one? Post it, please!

French Market Doughnuts-Beignets
1 package active dry yeast
1 1/2 cups warm water (105°)
1/2 cup sugar
1 teaspoon salt
2 eggs
1 cup undiluted evaporated milk
7 cups all-purpose flour
1/4 cup soft shortening
oil for frying
confectioners' powdered sugar
In large bowl, sprinkle yeast over water; stir to dissolve. Add sugar, salt, eggs and milk. Blend with beater. Add 4 cups of the flour; beat smooth. Add shortening; beat in remaining flour. Cover with plastic wrap and chill overnight.
Roll out on floured board to 1/8-inch thickness. Cut into 2 1/2-inch squares. Deep fry at 360° 2 to 3 minutes until lightly browned on each side. Drain on paper towels and sprinkle heavily with powdered sugar. Serve hot.
Note: This dough can be kept for up to a week in refrigerator and actually improves with age; just punch down when it rises. Dough can also be frozen; simply thaw, cut and roll, or shape doughnuts before freezing.

my first night's sleep wasn't exactly eventful since there is no beds available and i have to sleep on the pews which my body doesn't exactly agree with hard wood and no cushion on it.
so i didn't sleep very well.

It's good to hear you have three hots and a cot(or pew). I realize you may find it difficult to think positive under the circumstances but try and do what you can to help out around the shelter. It will make you feel better and make the days pass quicker until you find work.
I volunteer at a soup kitchen where I met a man in a situation much like yours. He always helps with clean up and has an encouraging word for the other residents. I commented once to him how nice it was to see him smiling. He said, I cried because I had no shoes. Then I met a man who had no feet. I asked where that quote came from. He said he got it from Rosanne Rosannadanna on Saturday Night Live. We both ROTFL. So best wishes to you Neal and don't let a day go by without a smile. Things are going to turn around for you.

Thanks for your reply. It is more than a bit discouraging to discover that 15 years ago there were as many cases in the courts and in the news as there are now and yet it failed to capture the attention of the nation's media or public. The lawmakers were surely aware of of this and little or nothing was done. It appears that children's rights advocates have always had to fight an uphill battle, especially where religion was involved.

Victims of abuse deserve social justice. None of this can be achieved in an atmosphere of secrecy or collusion. Where negligence, cover-up, emotional and physical harm are involved, civil lawsuits should be undertaken. Churches have only started to acknowledge that a problem exists when their pocketbooks have told them so. Financial culpability will ultimately make church officials and church offenders responsible for their actions.

Deputy DA Haynes has stated on more than one occasion that Cary Verse's "...religious beliefs are a major part of his support system." Okay. Since the state of California's castration legislation has chosen for whatever reason to omit mandatory counseling as a part of the program this leaves the chemically castrated brother Verse without the specialized therapy he needs to combat the urges that has led to nearly half a lifetime of incarseration.
When Verse walks out the door of Atascadero State Hospital as the first ever to be freed from the state's program for violent sexual predators the JW congregation he will attend and rely upon for support along with the community at large has a right to know his whereabouts and activities at all times. This is not asking too much. Will he go door to door? Will he have access to Jehovah's Witness teenage boys? We know the answer to those questions. It's tragic that those deciding the future of so many people haven't done their homework on the religion Verse has chosen to embrace(his major support system).

The Watchtower Bible and Tract Society actually argued that forcing them to report child molestation is a violation of their free exercise of religion.
There is an exemption within the Religious Freedom Protection Act for abuse cases and amendments that clearly state there is no religious excuse for crimes against children and for failing to report abuse when required to by law. The ACLU warned the public last year that churches would cite portions of this law in an attempt to block prosecution. They were right, it's going to be a pain in the arse but too bad, it's not going to fly in this case.
i just heard that fred rogers (aka mr. rogers) died today of complications related to stomach cancer.. my kids loved watching his show as much as they enjoyed watching mr. dressup.
when ernie coombs (mr. dressup) passed away a week after 9/11, my kids were devastated, it was like one of their best friends had died.
i was devastated too - for my kids and for the part of me that also enjoyed mr. dressup as a child.. give your kids a big hug today when you tell them the news about mr. rogers.
It's a sad day in the 'burgh. Rest in peace Mr. Rogers and a big thank you from all of "your kids." Thank you for taking us to the places our parents never had the time to, like the pickle factory on the northside, the Hershey and Crayola factories, and for wearing that Penguin Jersey! The thank yous would take all day and many pages. You will be greatly missed over at Children's Hospital where you brightened many a day. You always had time for all of your kids, personally answering every letter ever sent to you. I still have my Daniel Stripped Tiger on my bed who through you taught so many of us that we were brave and didn't even know it. That's important to a kid ya know.
Fond memories today, even of that creepy Lady Elaine(named after his sister). One of the 'burgh's finest.
