Just for those worried about the business part of it :
From 1994 to 2000 I worked in my dad's office doing his bookkeeping -- invoicing, balancing his checkbook, accounts receivable. There we used Quickbooks...
I got a vocational certificate in Business and Office Technology from a county Vo-Tech
Summer of 2000 I worked as a payroll clerk for one of my dad's friends. There we used Quickbooks
Aug 2000-May 2001 I worked in Accounts Payable .. then my co-worker quit and I took over her job too doing A/P, A/R, and Payroll There we used Quickbooks
May 2001 I moved to a job at a college and worked in the office there doing Data Entry
Then I took up a part time job as a spreadsheet designer for a construction company on the side.
Then I went to work in 2002 for a bank and stayed there until 2005.
At night from 2003-2005 I worked in a kitchen for an Italian place.
Then I moved to my current job in 2005. I'm an Office Manager at a retail store. I do payroll up until the point where I hand it over to the lady who cuts the checks so that I can oversee overtime, accounts receivable (limited to certain customers we have had problems with and they wanted someone who wouldn't mess them up to handle them) , billing. (I just check what others have billed to make sure they did their job correctly) I also manage the expenses and approve or deny purchases and invoices to be paid. .. I do a lot of accounting too.
The business part is totally not what I'm worried about. I already have a spreadsheet made so that I can plug in my recipies and it calculates the cost of each cake. I have my expenses estimated so that I can divide them out over the number of hours open and then add that to the cost of the cake depending on the time it takes to make each one. ... And I know Quickbooks and accounting like the back of my hand.
The real thing I need to work out is how to manage my time ... how long certain things will keep and what kind of bases I can make and then flavor when the need arises (Like have buttercream icing on hand and turn it into chocolate if need be)
