Does anyone know if you can turn retail space into a bakery? Like if I find a spot in a shopping center, can I turn it into a bakery? There would need to be more spots for sinks and the electricity for the ovens...

Congrats on the business plan! I have been self employed for 16 yrs now and I would never work for someone else ever. Look into incorporating for tax and liabilty protection. Loan your own personal money to the corp. with a high interst rate and payable upon demand note. Spend $10 to file a commercial lien against the corp. That way if the corp. has to bankrupt you get all your money back with interest and you will be first inline as a creditor.
I have two friends in the asset protection business and they have given some great info. on protecting a bsiness.

I'm trying to make this as painless as possible:
I'm trying to decide. The suberb I live in has about 16,500 in it and is a few miles from a bigger city with 176,600. I would really like it to be close to home for convenience but there's competition. There's a coffee shop, wedding cake maker (she only does wedding cakes), do-nut shop (they make birthday cakes too) and 2 ice cream parlors. In some ways I see all of them as competitors.
The big city has bakieries and plenty of coffee houses and plenty of ice cream parlors ... but they are ALL packed all of the time so I think there could be room for my place which is a little different than them all.
Then there is this other suberb to the south of the big city with pop. 8000 and it has a walmart and a lot of restaurants/grocery stores ... and a LOT of people have to drive through there every day on their way to work becaues its on a major highway... but there are no bakeries and no coffee shops. But its 30 minutes away. (I'm measuring in minutes so that you understand that the 12 miles is a pain)

Just try and give people the things they want, ask some friends what they would want.
If i were you i'd go for the Internet idea, do Tea/Coffee, have certain events there and make it all as interesting as possible. You'll be fine
