I absolutely love omelettes.
The problem is, i've come to realize the ones I make are pretty bland. I only usually use ham, and(or) bacon, sausage, cheese, and sometimes tomatoes. So give me some ingredient ideas to make a wonderful omelette!

Try a Tortilla Espanol I make them all the time
Those are good ingredients, just be more creative with them. Sundried tomatoes would be good, grilled chicken, different kinds of cheeses besides the ones you normally use, onions (though I prefer cooked over raw), steak omelets are good; I love mushrooms and they are good in omelets. The variety of stuff is endless! LRG
Ingredients: 4 good sized potatoes 4-5 eggs 2 cups olive oil 1 large sweet onion, chopped 1/2 bell pepper yellow, red or green (yellow is mildest) 2 tsp chopped garlic (4 cloves) 1/4 cup fresh parsley 2 tbsp chopped parsley 1 - 2 tsp salt (to taste) 1/2 tsp sweet smoked paprika (Pimentón de la Vera) 1/2 cup chopped jamón serrano Preparation: In a large bowl beat together eggs, peppers, garlic, parsley, jamón, paprika and salt. Set aside. Cut potatoes into 1/2 inch cubes, mix with chopped onion. Place potato mixture in a 10" non-stick frying pan and fry in sufficient oil to almost cover the potatoes. When potatoes are just cooked, remove from pan with a slotted spoon and place into egg mixture. Pour out oil and scrape pan. Coat the pan with olive oil, once more. Place combined potato/egg mixture into a medium hot frying pan, shape with spatula, flatten, push away from sides. Continuously shake the pan so that the tortilla does not stick on bottom. Turn firm tortilla by inverting onto a flat lid and sliding back into pan. Continue to shake pan to prevent sticking. When browned, remove the tortilla to a plate. Serve hot or cold.
I like asparagus. I can eat it plain as a vegetable sidedish but I am not that crazy about it but in an omelette it is divine! I use the frozen variety because it is firmer. I slice it into small pieces and put it directly into the egg mixture. I find I do not have to add milk or water to the eggs as the asparagus makes a nice moist omelette naturally through its own juices.
Add jalapenos and they won't be bland anymore.

Have I missed out on something key to making an omelette? Is adding water and milk to the eggs always a good thing to do?
My favorite is an omelette with fresh spinach, feta cheese, tomatoes, fresh mushrooms, bacon and onions. grrr yum!
