    I can't beat kittens, but I like spinach and feta.

    A little creole seasoning will add flavor and a little "heat".

    I was going to suggest tuna but now that it's dolphin free it just doesn't taste the same anymore, kinda bland.

    Is adding water and milk to the eggs always a good thing to do?

    It's traditional, but I don't like it, so I leave it out.

    Hey, go to epicurious.com and use frittata as a search term. That's a lazier, more substantial omelette with some grain-stuffs in it (or potatoes).

    Also at epicurious.com, there's a recipe for a spaghetti tomato sauce and mozzarella omelette. I cheat and make it with Trader Joe's spaghetti sauce.

    My tips...

    Like GF said, skip the water and milk.

    I fry in a mix of salted butter and olive oil.

    Saute red onions and fresh mushrooms in that.

    Season lightly with coarse ground pepper and kosher sea salt.

    Put aside.

    Fry prosciutto next.

    Put aside.

    Beat eggs, whipping air into them.

    Fry.

    Flip.

    Lay generous amount of smoked provolone in omelette, next prosciutto, onions, and mushrooms, with every last drop of the flavorful juices.

    Close and serve.

    then there's the kind of recipe you don't really want to admit to:

    take a couple of handsful of frozen hash brown or O'Brien potatoes, add to a couple of handsful of chopped frozen vegetables and a handful of diced frozen onion. Toss together. Beat enough eggs with some milk from just a couple of tablespoons full of milk for an eggy kind of omelet up to equal volumes of milk and eggs for a more custardy dish. Saute all the veggies until hot, sprinkle with the cheese, pour in the eggs and milk, cover and cook on the stove top.

    Agree with smoked salmon/onions and throw in a few capers if you like the flavour.

    Also agree with SPAM w/ onion!
