OK back to fluff for a change...has anyone had success making icecream?

    Every home made ice cream I ever had, tasted terrible. I like the store bought myself and really enjoy Diary Queen!!!!

    Dairy Queen????!!!! Its pumped full of air and chemicals. When I was growing up there was a homemade icecream shop .....very well known in the southwest side of Chicago. It was called the Plush Horse. All strictly home made icecream.. People came for miles around the city to this place. Pistachio and Rum Raison were some of the favorites. I think its still in business. I use to ride my bike for about 4 or 5 miles just to have a cone. To this day I am trying to duplicate their flavours and heavy delightful texture. r.

    Restrangled,

    Your problem is your ingredients, not your ice cream maker. If you want ice cream that tastes like Hagen Daz or Ben & Jerry's you have to use skim milk powder.

    My daughter brought her recipe with her and we made a huge batch. I think we used 20 eggs, 4 litres of cream, honey and vanilla, (Milo for the chocolate batch).

    No fancy equipment, just a large bowl and my grandmother's eggbeater.

    The ingredients were all whipped separately and then folded together.

    The icecream containers were put into my chest freezer, separated by standing them on corks.....

    ...and now the important bit....

    ....A 4" fan was placed in the freezer to 'blast freeze' them.

    Usually her icecream is hard at the bottom of the container and too fluffy at the top, but this time, the texture was consistent right through.

    The taste and texture was fabulous.

    Ice cream is my favorite. My Dad used to make it when I was a kid.

    I would like to make some myself but I don't know which machine I should use. Not all machines make good ice cream.

    Maybe someone here can advise me.

    Yes I Make great Icecream. If your freezers is to cold it will freeze to hard, also a high sugar content will make it hard.. Try substuting some honey for sugar. Remove from freezer before you want to use it.

    i made ice cream once for my folks anniversary

    well sorbet i suppose - i had to scoop out oranges but keep the skins intact,,,use some of the juice and pith to make the ice cream and serve it in the skins...supposed to take few hours to prepare make and eat.

    we were still waiting for it to set 2 days later.

    twas quite nice tho in the end up

    Using skim milk powder makes for a smooth, dense, rich ice cream like Ben & J's.
