    I've never had pig tails. But I will admit that I love oxtail stew. You get some huge chunks and oh maaan... I think I might have to have that for lunch today...

    Oh Snowy, thanks for the culinary trip down memory lane. I too love my comfort foods, but need to be careful. Here is what I suggest.

    Gently simmer your favorite pork parts in lightly salted water just deep enough to cover ( with a lid ajar) for thirty minutes.

    Drain into a colander in the sink ( of course run hot water so as not to clog your pipes up)!

    Saute your veggies in a skillet til tender, then add your yummies. Let them cook a good twenty minutes to get browned, then add a little water and cover that for another twenty.

    viola! Old timey taste, half the fat!
