Wings, your idea (pork tenderloin with a chipolte lime glaze, potatoes baked in a 4 cheese sauce, and a fresh salad with steamed green beans or asparagus) sounds great. Only I don't know how to cook pork tenderloin. I'll do some searching on the internet for a recipe. Potatoes are great, I could make colcannon. That's delicious and low-fat. Salad and veggies - yup it would be a great meal!
