beans and cornbread.
The cornbread needs to be made in a cast iron skillet thats been heated in a hot oven with melted hot fat, then pour the batter on top of that.
Or better yet, make corn pone.

Gallinejas are a traditional dish in Madrid . The dish consists of small intestines, spleen, gizzard, and pancreas, fried in their own grease in such a manner that they form small spirals. The dish is served hot immediately after preparation, and is often accompanied by french fries.
Few establishments today serve gallinejas, as it is considered to be more of a delicacy than a common dish. It is most commonly found served during festivals.

If done right, it can be pretty tasty...maybe an acquired taste if you know what you're eating...but if you grew up with it and didn't know, it's no big deal. Personally, I never cared for it but I think it was because it wasn't prepared all that well. My grandmother made them but she was not known for her cooking so my opinion was tainted...as was her cooking...
