Welcome to the board. You are doing research and are looking for answers, thats fantastic. The book "Jesus Interrupted" by Ehrman a bible scholar writes about many of the mistranslations and mistakes on the NT. "Who wrote the bible" by elliot friedman another scholar who brings years of research on the OT. I think you will love them and afterward you will have the answer to your question and more.

It was very common for writers to look back at old prophecies and see them being "fullfiled" duirng a specififc event or in aspeciffic person.
It was simply an opion of the writer(s).
Jesus being the Messiah has much more to do than mere OT prophetic interpretations, much more.
