The Jamaicans also do something called Escovitch fish.
It is delicious, but I like fish. Escoveitch comes from the Spanish escabeche.
I haven't had any of the Jamaican version in years.

Oh, if you like escoveitched fish, you would love ceviche, which can have fish or seafood like shrimp or both. The food is not cooked, it sits in an acidic lime marinade for a day.. my wife makes it very good.
