I love to go to the Guggissberg Swiss Cheese factory in Charm, Oh. Love their Baby Swiss! Of course, I have quite a drive to get there, since I live in Florida.

Black diamond extra strong cheddar. For on spagetti, parmesan.

It can be plain ol yellow cheddar to Manchego, goat cheese, fresh mozzarella...oh I just love cheese.

I don't really care for that long stringy mozzerella that they put on pizza. A stronger, shorter strand cheese would be better, in my taste. Maybe, a lower fat ricotta.
