I would have advocated a softer approach. This girl in my lexicon is one of the "takers". Even when she thinks she's being a support, she's a life-sucker.
I read a great article about boundaries and needy people. Often when you put strict boundaries on a relationship like this, they cooperate!
As in, "You know, I feel we are at most acquaintances and I can't really commit to seeing you more than a few times a year. How about going out for coffee on the first day of fall?"
If she "rejects" you, consider yourself lucky. If she accepts your terms you may need to tighten them further as in, religion is off-limits.

So from what I've read she's pro JW even though she's not one of them right now.
By telling her that your now an Atheist etc. your putting possible future events in her hands if she returns......why do that? After having spent time with her and getting a negative reaction just cancel the date and leave it alone. To keep on doing as well as you have you will, on occasion, have to say no.

Hubby is a Witness fan. Talks the talk. Loves the literature, the rituals, the highlighters....

If I was in her position I would be tempted to come back, JW elder Daddy is VERY VERY rich!
