Aaah... Cheese ! I love cheese, real cheese, not the american processed, sliced, plastic wrapped horror that everybody is eating around here, yuk !

Gruyere is delicious --- the french counterpart : Comte is even better... (I need an accent on the "e" of Comte here) Morbier is very good --- Camembert, yum ! Tomme de Savoie is heavenly. Chevre - Goat cheese is one of my favorites, Roquefort, Hmmm... Munster, I love Munster ! In fact, I don't believe there is any french cheese I don't like.

EMan = have you ever had a Raclette in your travels on the continent ? Aaah... Raclette, melted cheese over potatoes....

Some nice Cheshire on crackers with red wine. mmmnnn

I do like cheeses but have never put the effort into learning their names. There is a very nice shop called the Cheese Wedge where I often go for fresh sandwiches at work, they have lot's of cheeses that I've never heard of but I've never tried any of them ... maybe I will. I've heard them talking about cheese with other customers and they seem to know their stuff ... I didn't know there was that much to know about it !

Ok, Ok, for the record, this is not the ONLY cheese consumed in America, but just one of many. It DOES serve a purpose however on cheeseburgers, balogna sandwiches and sometimes even on hot dogs.

By itself or with crackers, my favorite is very sharp cheddar. For a mild cheese, I like baby swiss. On pizza, I like a mixture of mozzerela and provalone. On chili, I like to sprinkle on some colby or mild cheddar. On salads, I like crumbled blue cheese on top of ranch dressing. For a grilled cheese sandwich, I like swiss. On cheeseburgers, I like Kraft American slices. Yes, our refrigerator is full of cheese.

I adore nibbling the rind - slowly.

The cheese it's self is silkily firm with holes so velvety smooth and perfectly formed they seem almost tailor-made fit the end of my tongue .

Why am I replying to a cheese thread ?!

Now I sound odd; I was never going to tell anyone all that ...!
