Ya'll haven't lived until you've tasted Tillamook Cheddar, made on the Oregon coast. Now, that's cheese. American cheese is alright for grilled cheese sandwiches, although it still makes no sense that they say they put 5 ounces of milk in each 1 ounce slice.
I also prefer a good aged swiss for my lunch sandwiches. Cottage cheese is alright for salads and such, but when making a pasta and sauce dinner, I use ricotta instead.

Blue cheese, especially in salad dressing, camembert (has anyone ever had it deep fried?Yum!) or a chunk of roquefort freshly crumbled onto a salad. Absolutely cannot stand cheeze whiz - does not even qualify as cheese - real cheese does not come in a can, I do not care what the can claims is in there! American cheese is gross- ANYTHING that stays fresh THAT long should be labeled hazardous to your health. I think there is some in my refrigerator that my stepson bought in August that has yet to show any sign of mold!

Steve surprised me last Friday with a night out to a real nice restaurant in Seattle. I had cappelini pasta with braised goat and goat cheese and olives. It was heaven, or should I say paradise earth.
I had already ordered dessert when we discovered an after dinner cheese selection menu. I would have liked to try some.
Maybe we should try a NW Christmas apostafest wine and cheese party?
